The traditional dal and rice-based idli requires overnight fermentation. To make the process quicker, here is an instant suji idli recipe. Just follow the instructions and serve a South Indian meal under 20 minutes.
1 cup suji 1 cup curd 1/2 cup water 1 teaspoon salt 1/2 teaspoon cumin seeds 1/4 teaspoon mustard seeds 1 green chilli 1 teaspoon oil 1/2 teaspoon baking soda
Heat a pan and roast suji for 2-3 minutes.
Mix the roasted suji with curd, water, and all the spices till you get a smooth batter.
Just before steaming, mix in baking soda.
Grease the idli moulds, pour the batter, and steam to perfection.
In about 10 minutes, your instant suji idlis will be ready to serve.
