If you’re looking for a South Indian meal but don’t have the time to ferment the batter, this is just the recipe you need. With a batch of instant ragi idlis, you can have a gluten-free meal in under 30 minutes.
1 cup ragi flour ½ cup suji ½ cup curd ½ cup water (as needed) ½ teaspoon baking soda Salt to taste For tempering: 1 teaspoon oil 1 teaspoon mustard seeds 1 teaspoon urad dal 1-2 green chillies, finely chopped A few curry leaves
Take a bowl and mix ragi, suji, curd, salt, and water. Let the batter rest for 10-15 minutes.
Heat some oil and temper mustard seeds, urad dal, green chillies, and curry leaves.
Add the tempering to the batter. Grease the idli moulds and prepare your steamer.
Just before steaming, add baking soda and gently mix.
Pour the batter into the moulds and steam for about 10 minutes.
Serve the ragi idlis hot with nariyal chutney and sambar.
