Crepe chocolate cake is made by layering thin cocoa crepes with smooth chocolate ganache to create a delicate stacked dessert. Unlike traditional sponge cake, it relies on multiple soft crepes for structure. Chilling allows the ganache to firm up and hold the layers together. The final slice reveals elegant chocolate layers.
For Crepes 1 cup all-purpose flour 2 tbsp cocoa powder 2 eggs 1½ cups milk 2 tbsp melted butter 1 tbsp sugar For Ganache 200 g dark chocolate 1 cup fresh cream
Whisk flour, cocoa, eggs, milk, butter and sugar into a smooth thin batter and rest briefly.
Cook thin crepes in a lightly greased pan and allow them to cool completely.
Heat cream and pour over chopped chocolate and stir until smooth ganache forms.
Layer crepes with ganache one over the other and refrigerate for at least two hours before slicing.
