New York Cheesecake is known for its rich, dense, and creamy texture with a smooth vanilla flavour and buttery biscuit base. It makes a perfect indulgent dessert for special occasions or when you crave something sweet and luxurious.
200 g digestive biscuits (crushed) 100 g unsalted butter (melted) 600 g cream cheese (softened) 200 g caster sugar 200 ml sour cream 3 eggs 1 tsp vanilla extract 2 tbsp plain flour
Mix crushed biscuits with melted butter and press firmly into a springform tin to form the base.
In a large bowl, beat cream cheese with sugar until smooth, then add sour cream, eggs, vanilla, and flour.
Pour the mixture over the biscuit base and smooth the top.
Bake at 160°C for about 50 minutes until set but slightly wobbly in the centre.
Cool completely, chill for 4 hours, and serve plain or topped with fresh fruit.
