A Continental classic—the Caesar salad is a creamy and savoury option to rustle up on hectic work days when time is short on hand. Elevate its protein composition by adding grilled chicken or tofu to make it a complete meal.
250 grams romaine lettuce ½ cup parmesan cheese 3 boiled eggs 1 cup croutons 1 grilled chicken breast./grilled tofu, sliced ½ cup Greek yoghurt 1 tablespoon Dijon mustard 2-3 cloves garlic, minced Juice of 1 lemon 2-3 tablespoons olive oil Salt and pepper, to taste
Wash and pat dry the lettuce leaves and add them to a bowl.
Combine the Greek yoghurt, Dijon mustard, garlic, lemon juice, olive oil, salt and pepper.
Grate the boiled eggs into the yoghurt mixture and add half of the parmesan cheese
Mix well to combine before using some of it to coat the lettuce and saving the rest for later.
Top up with the sliced protein of choice, croutons and more parmesan cheese before serving.
