A spicy-cheesy munchie—the chilli cheese toast is a play on the nostalgic classic of grilled cheese; but open-faced and spiked with heat. Pairing it with a cup of tea or coffee in the evening is a great way to punctuate caffeinated beverages with a contrast of soft-crunchy textures.
2 slices white bread 2 cubes processed cheese, grated 1 green chilli, finely chopped ¼ capsicum, finely chopped 2 tablespoons butter ½ teaspoon chilli flakes Black pepper, to taste
Toast the bread slices lightly while combining the remaining ingredients in a bowl.
Once lightly browned, spread the cheese mixture on one side of each slice and toast it further until the top is melted.
Cut into triangles or strips and serve hot.
