Bring an exciting fusion twist to your Navratri 2026 menu with these farali momos. Thin wrappers made from amaranth (rajgira) or water chestnut flour encase a delicious, spiced filling of grated paneer, cabbage-free crushed veggies, and green chillies. Steamed to perfection, these vrat-friendly dumplings deliver all the comfort of classic street-style momos while strictly adhering to fasting guidelines.
1 cup amaranth flour (rajgira atta) or tapioca starch  1/2 cup finely grated fresh paneer  1/2 cup finely chopped bottle gourd (lauki) or grated carrots  1 green chilli, finely chopped  1/2 teaspoon black pepper powder  1/2 teaspoon ginger paste (optional, as per fasting preference)  Rock salt (sendha namak) to taste  Warm water for kneading  1 teaspoon oil or ghee
Knead the amaranth flour with warm water, a pinch of rock salt, and a teaspoon of oil into a smooth, pliable dough, then cover and rest for ten minutes.
Combine the grated paneer, bottle gourd, green chilli, black pepper, and rock salt in a bowl to prepare the momo stuffing.
Pinch small balls of dough, roll them into thin circles, place a spoonful of stuffing in the centre, and pleat the edges together to seal into momo shapes.
Arrange the momos in a greased steamer basket and steam over boiling water for eight to ten minutes until shiny and cooked through.
