Sabudana Khichdi is one of the most loved fasting dishes during Navratri, made with sago pearls, potatoes, peanuts, and mild spices. It is light on the stomach, yet filling and nourishing, making it a wholesome option for vrat.
1 cup sabudana (soaked overnight) 2 medium potatoes (peeled and diced) 2 tbsp roasted peanuts (coarsely crushed) 2 green chillies (finely chopped) 1 sprig curry leaves 1 tbsp ghee or oil ½ tsp cumin seeds Salt to taste (sendha namak for fasting) Fresh coriander leaves (chopped) Lemon juice to taste
Heat ghee in a pan and add cumin seeds, curry leaves, and green chillies.
Add diced potatoes and cook until tender.
Add soaked sabudana, crushed peanuts, and salt. Stir well on low flame.
Cook until pearls turn translucent and fluffy. Garnish with coriander and lemon juice before serving.
