Rajgira Halwa is a traditional Indian sweet prepared during Navratri fasting. Made with rajgira flour, ghee, sugar, and dry fruits, it is both filling and flavourful, providing energy throughout the day.
½ cup rajgira (amaranth) flour 3 tbsp ghee ½ cup milk or water ¼ cup sugar or jaggery powder 2 tbsp chopped dry fruits (almonds, cashews, raisins) ½ tsp cardamom powder
Heat ghee in a pan and roast rajgira flour on low flame until aromatic.
Add milk or water gradually, stirring continuously to prevent lumps.
Mix in sugar or jaggery and cook until it dissolves.
Add cardamom powder and dry fruits.
Serve warm as a festive sweet during Navratri.
