Who said your Navratri thali has to be filled with just sabudana tikkis and kuttu puris? If you’re looking for a light dish to add to your thali, try this no-salt recipe for aloo tamatar sabzi.
4 potatoes 2 tomatoes, chopped 1 green chilli 2 tablespoons oil 1 teaspoon cumin seeds 1 bay leaf 1 black cardamom pod 1 clove 1/2 teaspoon turmeric powder 1 teaspoon red chilli powder 1 teaspoon coriander powder 1/2 teaspoon garam masala Salt to taste Coriander leaves, for garnish
Boil potatoes, peel, and cut them into cubes. Chop tomatoes into small pieces.
Heat some oil and add cumin seeds, bay leaf, black cardamom pod, and clove. Let them splutter.
Add green chillies and chopped tomatoes. Cook till they are mushy.
Mix in turmeric powder, red chilli powder, and coriander powder. Add chopped potatoes and cook.
Add water to adjust consistency. Season with salt and let it simmer for about 10 minutes.
Garnish with chopped coriander leaves and serve.
