Beet Halwa is a vibrant satvik dessert often prepared as bhog during Navratri. Made with grated beetroot, milk, ghee, and nuts, this halwa is naturally rich in flavour and colour, while being light on the stomach for fasting days.
2 medium beetroots (grated) 2 cups milk 2 tbsp ghee 3 tbsp sugar or jaggery (as per preference) 4–5 cashews (chopped) 4–5 almonds (chopped) 2 cardamom pods (powdered)
Heat ghee in a pan and sauté the grated beetroot for a few minutes until raw smell fades.
Add milk and cook until it reduces, stirring occasionally.
Mix in sugar or jaggery and continue to stir until thick.
Add cardamom powder and garnish with chopped nuts. Serve warm as bhog or a festive sweet.
