A unique and versatile fruit, persimmons have a bright orange colour and a sweet, somewhat astringent taste. They can be incorporated into various sweet recipes. This persimmon sorbet is a straightforward recipe that you can try at home when you have a craving for a new dessert.
600 grams of persimmon Water, as needed ½ cup of sugar 2 teaspoons of lemon juice ½ cup of water 2 tablespoons of crystallised ginger, chopped
Cut the persimmons in half. Scoop it out. Grind them into a puree with sugar.
Strain the puree for a smooth consistency into a mixing bowl.
Add lemon juice, water and crystallised ginger to the persimmon puree.
Pour into an ice cream maker or into a loaf tin or a freezer-safe container. Cover it.
Put it in the freezer for 4-5 hours. Keep taking it out of the freezer every ½ hour.
Each time you take it out, stir the mixture with a fork and break the icy lumps that have formed.
Leave in the freezer overnight after the last stir. Serve persimmon sorbet to guests, family and friends!
