Mutton Sambar: A Spicy, Hearty South Indian Delight

Mutton Sambar is a delightful fusion of tender mutton and South Indian sambar. It is a combination of rich flavours, making it a hearty and satisfying dish. Here’s a quick and easy-to-follow recipe: -

Ingredients

500 g mutton (cut into pieces) 1 cup cooked and mashed toor dal 2 tbsp tamarind pulp 1 chopped onion 2 chopped tomatoes 1 sliced carrot 6–8 drumstick pieces 2 tbsp sambar powder ½ tsp turmeric powder 2 tsp mustard seeds 1 sprig of curry leaves 2 dried red chillies 3 tbsp oil Salt to taste Water as needed Fresh coriander for garnish

Step 1

Pressure cook the mutton with turmeric, salt, and water for 4-5 whistles.

Step 2

Heat oil, splutter mustard seeds, curry leaves, red chillies, then sauté onions and add tomatoes, carrot, drumsticks, letting it cook for 2-3 minutes.

Step 3

Add cooked dal, sambar powder, turmeric, tamarind pulp, water and mix well.

Step 4

Add cooked mutton and its broth, let it simmer for 10-15 minutes.

Step 5

Add coriander leaves and serve with hot rice.
