Ingredients

4 sliced mushrooms 2 bread slices 3 tbsp olive oil 1 portobello mushroom Salt, pepper to taste 2 tbsp ricotta cheese 1 tbsp balsamic vinegar Chilli flakes 2 garlic cloves Chopped coriander leaves Handful of arugula leaves ½ onion

Step 1

Clean and slice the mushrooms while you saute the onion and garlic.

Step 2

Add the mushrooms and cook them until they release water and dry up.

Step 3

Add salt, pepper, and coriander leaves. Toss them in a bowl with vinegar, arugula, and olive oil.

Step 4

Roast the bread slices until they are brown and crispy.

Step 5

Add the mushroom filling, cheese, and chilli flakes.

Step 6

Bake for a minute and add some fresh arugula before digging in.
