1 cup onion, coconut milk 300g mushrooms 1 tsp garlic, chilli powder 1 cup onion 20 cashews 3 tbsp oil 1.25 cups tomato puree 1.5 tsp coriander powder ¾ cup hot water Whole spices 1 tsp kaduri methi Salt to taste ¾ tsp cumin powder ⅛ tsp turmeric powder
Heat oil in a pan and add cumin seeds, bay leaf, cinnamon, and minced garlic.
Sauté for a minute and add chopped onions. When onions are translucent, add powdered spices and tomato puree.
Cook everything until the blend leaves the sides of the pan and oil floats on the surface.
Add coconut milk and hot water. Let the gravy cook while you remove the stems of mushrooms and clean them.
Sauté mushrooms in a pan with a little bit of oil, and then add them to the gravy once it thickens.
Garnish the gravy with a tablespoon of fresh cream and coriander leaves.
