Mumbai street-style Jini dosa is a spicy, buttery, cheese-loaded delight packed with vegetables and Schezwan flavours, rolled into a crispy dosa that’s messy and impossible to stop eating once you start.
2 cups dosa batter 1 tbsp butter 1/2 cup shredded cabbage 1/4 cup chopped capsicum 1/4 cup grated carrot 2 tbsp Schezwan chutney 2 tbsp tomato ketchup 1/2 cup grated cheese Salt to taste
Spread dosa batter thinly on a hot tawa and cook until slightly crisp.
Add butter, cabbage, capsicum, and carrot, sautéing directly on the dosa.
Mix in Schezwan chutney, ketchup, and salt, spreading evenly.
Sprinkle a generous amount of cheese on top and let it melt slightly.
Fold tightly into a roll, cut into pieces, and serve hot with chutney.
