Heat oil on a tawa or a large skillet. Add chopped onions, ginger, and garlic, sauté until golden brown. Add diced tomatoes, cook until they turn mushy. Mix in pav bhaji masala, red chili powder, and turmeric powder.
Toss in the assorted vegetables, sauté until they are partially cooked yet retain their crunch. Add cooked rice to the mixture, stir well until evenly coated with spices.
