Mumbai is known for its pav bhaji. Spicy sabzi made with assorted vegetables and served with pavs toasted in a generous amount of butter, here’s a street-style pav bhaji recipe you can bookmark.
1 cup water 3 tablespoons oil 1 tablespoon butter 1 onion 1 green chilli 1 inch ginger 1 clove garlic 1 tomato 2 potatoes 1/2 cup peas 1 teaspoon turmeric powder 1 teaspoon red chilli powder 1.5 tablespoons pav bhaji masala 1 teaspoon coriander powder Salt to taste Coriander leaves for garnishing 1 packet pav buns
Sauté chopped onion and green chilli. Mix in ginger, garlic, and tomatoes. Cook till fragrant.
Mix in turmeric powder, red chilli powder, pav bhaji masala, and coriander powder.
Add mashed potatoes, peas, and salt. Pour a cup of water and let the mixture simmer.
Garnish with chopped coriander leaves, onions, and butter.
Toast the pav till they are golden brown. Serve with hot bhaji.
