The classic Mumbai Frankie is the ultimate Indian street food wrap, celebrated for its perfect balance of tangy spices and comforting textures. Originating on the bustling streets of Mumbai, it features a flaky, egg-washed flatbread wrapped tightly around a spiced potato patty or juicy protein filling. Infused with a sharp onion-chilli vinegar splash and a generous dusting of proprietary chaat masala, it delivers an instant explosion of savoury flavours that makes it a legendary on-the-go meal.
2 flour tortillas or leftover rotis  1 large egg, beaten (optional, for egg wash)  For the patty: 2 boiled potatoes (mashed), 1/2 tsp chilli powder, 1/2 tsp chaat masala, and salt  1 small red onion, finely chopped  2 tbsp vinegar mixed with 2 finely sliced green chillies  1 tbsp Frankie masala or a mix of chaat masala and dry mango powder (amchur)  1 tbsp oil or butter
Mix the mashed potatoes with the chilli powder, chaat masala, and salt, then shape the mixture into elongated patties and shallow fry them in a pan with a splash of oil until crisp on both sides.
Heat a separate flat pan with a little butter, place your flatbread on it, pour the beaten egg evenly over the surface if using, flip immediately, and cook until the egg is set and the bread is warm and pliable.
Place the warm flatbread egg-side up on a clean surface, position the crisp potato patty right in the centre, and scatter the chopped onions over it.
Drizzle a teaspoon of the green chilli vinegar over the filling, sprinkle a generous pinch of Frankie masala, and roll the bread tightly into a cylinder before wrapping the bottom half in foil to serve.
