This traditional Doodh ka Sharbat is a deeply revered, cooling milk beverage prepared across South Asia during the solemn days of Muharram. Far from a basic flavoured milk, this festive cooler infuses chilled, creamy whole milk with sweet aromatic rose syrup, warming green cardamom, and a nutritious abundance of slivered almonds and pistachios. The inclusion of jelly-like, rehydrated sabza (basil seeds) provides a fantastic, texturally engaging element that delivers clean, cooling properties to soothe and rehydrate.
4 cups full-fat whole milk, boiled and thoroughly chilled  4-5 tbsp premium rose syrup or Rooh Afza  1 tbsp sweet basil seeds (sabza), soaked in water for 15 minutes  2 tbsp almonds, blanched and finely slivered  2 tbsp pistachios, finely slivered  1/4 tsp green cardamom powder and ice cubes for serving
Pour the pre-boiled and thoroughly chilled full-fat milk into a large serving pitcher, ensuring the foundation is completely cold before building the layers.
Drizzle the premium rose syrup into the milk, whisking steadily with a spoon until the liquid turns a beautiful, uniform pastel pink hue.
Stir in the green cardamom powder, slivered almonds, and slivered pistachios, allowing the rich nuts to distribute evenly throughout the sweetened milk base.
Add the plump, fully bloomed basil seeds along with a handful of ice cubes, mixing thoroughly with a ladle right before serving the aromatic drink in tall glasses.
