Many traditional breakfasts depended on fresh chutneys long before the packaged spreads were even a thing. The blend of coconut, herbs, and spices delivers taste, healthy fats, and plant-based nutrients that make the first meal of the day wholesome.
1 cup fresh grated coconut ½ cup roasted chana dal 4 green chillies 1 inch of ginger 8 curry leaves 2 tbsp coriander leaves 1 tbsp tamarind pulp ¾ tsp salt ½ cup water 1 tbsp oil ½ tsp mustard seeds ½ tsp urad dal 8 curry leaves 2 dried red chillies
Take fresh coconut, herbs, ginger, and curry leaves as morning chutney tastes best when prepared from fresh ingredients.
To the blender, now add coconut, roasted chana dal, ginger, green chillies, coriander, tamarind, salt, and water and grind until it gets a smooth consistency.
You can also adjust the consistency as per preference. A slightly thick chutney pairs perfectly with idlis, dosas, paratha, etc.
In a small pan, heat oil and add mustard seeds, urad dal, curry leaves, and red chillies to it until it turns aromatic and begins to splutter.
Pour the hot, prepared tempering over the chutney to add aroma to it.
Serve it with your regular breakfast dishes to change an ordinary morning meal into something special.
