Moringa Soup Recipe Supporting Iron-Rich Plant-Based Eating

Moringa soup is prepared gently to preserve the nutrients of the leaves. The flavour stays earthy and mild, making it suitable for regular meals. It is usually consumed warm and lightly seasoned.

Ingredients

1 cup fresh moringa (drumstick) leaves, cleaned 1 tsp oil 1 small onion, chopped 1 clove garlic, chopped 2 cups water or vegetable stock Salt and black pepper to taste

Step 1

Heat oil and sauté onion and garlic until soft.

Step 2

Add moringa leaves and cook until just wilted.

Step 3

Pour in water or stock and simmer for 5–7 minutes.

Step 4

Blend lightly or leave chunky, season, and serve warm.
