Moringa Sabji Recipe: Light, Healthy Drumstick Curry For Summer Meals

Drumstick sabji is a light, nutritious dish that’s ideal for everyday meals. Filled with essential fibre and nutrients, this simple curry feels wholesome and is also perfect when you are looking for something that is healthy, and you can easily add to your daily diet.

Ingredients

2 medium drumsticks (cut into pieces) 1 small onion (finely chopped) 2 medium tomatoes (chopped) 1 tbsp oil 1 tsp mustard seeds 8–10 leaves of curry leaves 1 tsp ginger-garlic paste ½ tsp turmeric powder 1 tsp coriander powder ½ tsp red chilli powder Salt to taste 1½ cups water 2 tbsp fresh coriander (chopped)

Step 1

In a pan, heat oil and add mustard seeds and curry leaves to it. Let them splutter and release aroma.

Step 2

Add some chopped onions and sauté until they turn soft. Mix in ginger-garlic paste and cook for a short span until the raw smell fades.

Step 3

Add the tomatoes, turmeric, chilli powder, and coriander powder to this base and cook until the tomatoes turn soft. Blend into a light masala without becoming too oily.

Step 4

Add the drumstick pieces and salt to this base. Mix everything gently so that they get covered well with masala, soaking up the spices.

Step 5

Pour in the water, cover, and cook until the drumsticks are tender and the curry stays light and a bit brothy, rather than thick or heavy.

Step 6

Lastly, garnish with fresh coriander, gently mix everything, and serve with roti or rice for a healthy meal.
