Moong dal kachori is a crispy, flaky Indian snack stuffed with a spiced moong dal filling. Popular in Rajasthan and North India, it’s loved for its crunchy texture and flavourful, savoury centre.
2 cups all-purpose flour ½ cup soaked and coarsely ground moong dal 4 tbsp ghee (for dough) 2 tbsp oil (for filling) 1 tsp cumin seeds 1 tsp fennel seeds 1 tsp ginger paste 2 finely chopped green chillies 1 tsp garam masala 1 tsp coriander powder ½ tsp red chilli powder ½ tsp turmeric powder Salt to taste Oil for deep frying
Mix flour, ghee, salt then add water to knead a soft dough and let it rest for 20 minutes.
Heat oil, sauté cumin, fennel, green chillies, ginger paste, then add ground moong dal, spices, salt and cook until it gets dry and cool.
Divide dough into balls, flatten, stuff with moong dal mixture, seal edges and roll lightly.
Deep fry on low-medium heat until golden and crispy.
Serve hot with tamarind chutney or green chutney.
