Moong bean pulao is an unpopular recipe but a healthy and protein-rich option to consider. From Monday to Sunday, it can be your go-to dish to cook when you are craving something wholesome.
1 cup whole moong beans 2 tbsp oil, coriander 6 basil leaves 1 tbsp lemon juice, tomato paste 1/2 cup mixed vegetables 1 tsp green chillies, ginger 1/2 cup tomatoes, onions 3/4 cup spinach 1/4 cup mixed colour bell peppers 1.5 cups cooked rice 1.5 tsp red chilli powder 1/2 tsp turmeric, garam masala 1 tsp Italian herbs, garlic 1/2 tsp red chilli flakes salt, to taste
Boil soaked moong with turmeric and salt.
While moong is cooked, chop and dice vegetables.
Heat oil in a pan and saute garlic, onion, ginger, and green chillies.
Add tomato paste and tomatoes. Sprinkle salt and cook for 5 minutes.
Drop in other vegetables and cook them. After 10 minutes, add boiled moong.
After 5 minutes, garnish moong pulao with lemon juice and coriander leaves.
