Rainy evenings call for snacks that feel hot, crisp and a bit spicy. Recreate the street-style appeal of mirchi bhajji at home that is very easy to make and needs only a few basic pantry ingredients like big green chillies, besan batter and a few spices.
8 large green chillies 1 cup besan 2 tbsp rice flour ½ tsp ajwain ½ tsp turmeric powder ½ tsp red chilli powder ½ tsp cumin powder Salt, to taste Water, as needed Oil, for deep frying Chaat masala, for serving Lemon wedges, for serving
Wash the green chillies thoroughly and pat them dry. Slit each of them lengthwise and remove seeds if desired.
In a bowl, mix besan, rice flour, ajwain, turmeric, chilli powder, cumin powder and salt as per taste. Add water slowly to make a thick, smooth and lump-free batter.
Dip each chilli fully into the batter, and coat them evenly. Let the extra batter drip off before you fry them.
In a deep pan, heat oil over medium flame and place the coated chillies in it. Fry them in small batches, turning them on all sides until they are fully golden and crisp.
Drain each piece on the paper towels, then sprinkle a pinch of chaat masala. Serve them hot with green chutney and a hot cup of chai.
