Monsoon evenings call for comfort food, and one-pot rasam rice is just that. This easy, flavourful dish will warm your soul on rainy days.
3/4 cup rice 1/2 cup toor dal 2 Tbsp Tamarind pulp 2 tbsp oil 3 tbsp ghee 1/2 tsp mustard seeds 1/2 tsp cumin seeds 1/4 tsp hing 10-12 curry leaves 10-12 whole black pepper 2 dried red chilli 8-10 garlic cloves 2 green chilli 4 small onions, halved 1 large tomato
1/2 tsp Kashmiri red chilli powder 3/4 tsp spicy red chilli powder 1/4 tsp turmeric 1/2 tsp coriander powder 1 tsp sambhar masala or rasam powder Salt to taste Water - 4 times the amount Coriander leaves for garnish
Rinse rice and toor dal. Soak tamarind in warm water, extract the pulp, and set aside.
Heat oil and ghee in a large pot. Add mustard seeds, cumin seeds, and hing. Add curry leaves, whole black pepper, dried red chillies, garlic, and green chillies. Sauté until fragrant. Add onions and tomatoes. Cook until soft.
Add red chilli powders, turmeric, coriander powder, and sambhar masala. Stir well. Add rice and toor dal, mix thoroughly. Pour in water, tamarind pulp, and salt. Cook until rice and dal are soft and fully cooked.
Garnish with fresh coriander leaves and serve hot.
