Paneer bhurji feels like a quick ghar ka meal, soft paneer tossed with onions, tomatoes, and simple masalas. It’s the kind of sabzi that comes together fast but tastes like something you’d happily eat every day.
200 g crumbled paneer 1 tbsp butter 1 tbsp oil 1 small finely chopped onion 1 finely chopped tomato 1 chopped green chilli 1 tsp ginger-garlic paste 1/2 tsp turmeric powder 1 tsp red chilli powder 1 tsp pav bhaji masala Salt to taste 5-6 chopped coriander leaves
Heat butter and oil, then cook onions till soft and lightly golden, like a usual home base.
Add ginger-garlic and chilli, cooking till the raw smell settles.
Put in tomatoes with salt and cook patiently till they turn soft and slightly mushy.
Add spices, then mix in paneer gently so it stays soft, not dry.
Cook for just a minute, finish with coriander, and serve hot with roti or bread.
