Khichdi is a comfort food for almost all Indians. To make a healthier version of the rice-based khichdi, you can use mixed millets. Try this recipe and quickly make a gluten-free, one-pot meal.
1 cup mixed millet 1/2 cup moong dal 1 tablespoon ghee 1/2 teaspoon cumin seeds 1 medium onion 1 green chilli 1 inch ginger 1 tomato 1/2 teaspoon turmeric powder 1/4 teaspoon red chilli powder Salt to taste 4 cups water Chopped coriander leaves for garnish
Heat some ghee in a cooker. Sauté cumin seeds, chopped onion and green chilli.
Add grated ginger and tomato. Next, add moong dal, turmeric, red chilli powder, and salt.
Mix in the rolled oats. Stir well. Pour in the water and cook for 3 whistles.
Once done, let the pressure release naturally for 10 minutes.
Garnish with chopped coriander leaves and serve with dahi and achar.
