To take the traditional rice-and-dal-based khichdi to an even healthier level, you can replace rice with millet. High in protein, fibre, vitamins and minerals, this gluten-free one-pot recipe is perfect for busy days.
1 cup mixed millet 1/2 cup moong dal 1 tablespoon ghee 1/2 teaspoon cumin seeds 1 medium onion 1 green chilli 1 inch of ginger 1 tomato 1/2 teaspoon turmeric powder 1/4 teaspoon red chilli powder Salt to taste 4 cups water Chopped coriander leaves for garnish
Heat some ghee in a pressure cooker. Sauté cumin seeds, chopped onion and green chilli.
Add grated ginger and tomato. Next, add moong dal, turmeric, red chilli powder, and salt.
Mix in the mixed millet. Stir well. Pour in the water and cook for 3 whistles.
Once done, let the pressure release naturally for 10 minutes.
Garnish with chopped coriander leaves and serve with dahi and achar.
