Kheer, the creamy and comforting Indian dessert traditionally made with rice, can also be enjoyed in a healthier version. If you want to make it gluten-free, here’s a millet kheer recipe that is super indulgent.
1 cup mixed millet 3 cups milk 1/4 cup sugar 1/4 teaspoon cardamom powder A pinch of saffron strands A handful of chopped almonds and cashews
Rinse and soak the millet for half an hour.
Boil the soaked millet in milk. Reduce the heat and let it simmer for 20-25 minutes.
Add sugar, cardamom powder, and saffron strands to the pot. Stir well.
Let the kheer simmer till you get the desired consistency.
Garnish with chopped almonds and cashews, and serve.
