Mix veg curry is a wholesome and flavorful Indian dish made with a variety of fresh vegetables cooked in a spiced onion-tomato gravy. Perfect with roti, naan, or rice, it’s a comforting and nutritious choice for lunch or dinner.
1 cup mixed vegetables 1 chopped onion 2 pureed tomatoes 1 tsp ginger-garlic paste 2 tbsp oil ½ tsp cumin seeds ½ tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder ½ tsp garam masala Salt to taste 2 tbsp fresh cream (optional) Coriander leaves for garnish
Heat oil, add cumin seeds and sauté chopped onion till golden.
Add ginger-garlic paste, cook for a minute, then add pureed tomatoes, salt, spices and cook till oil separates.
Add chopped vegetables, water, then cover and cook till veggies are tender.
Stir in cream garam masala and simmer for 2 minutes.
Garnish with coriander leaves and serve hot with roti or rice.
