Missi roti brings together wheat flour and besan for a slightly nutty, spiced flatbread. Crisp edges, soft centre, and a hint of ajwain make it perfect with butter, curd, or pickle.
1 cup wheat flour ½ cup gram flour (besan) 1 tbsp chopped onion 1 tbsp chopped coriander 1 green chilli, chopped ½ tsp ajwain ½ tsp turmeric powder Salt to taste Water as needed 1 tbsp oil or ghee
Combine wheat flour, besan, onion, coriander, green chilli, spices, and salt in a bowl.
Add water gradually and knead the dough until its soft, then let it rest for 10-15 minutes.
Divide the dough into portions and roll each one into a slightly thick roti.
Cook the roti on a hot tawa, flipping and applying ghee or oil until golden brown spots appear.
Serve the missi roti hot with butter, curd, or pickle.
