Mirchi pakora is popularly consumed throughout the country and known by different names. Large, less spicy chillies are stuffed with spiced filling and deep-fried until the top layer is crispy. Check the recipe.
Oil for deep frying 4 boiled potatoes 250 g green chillies 1.5 tsp coriander powder 1 tsp red chilli powder 1 tsp cumin, mustard seeds 2 cups of besan Water as needed Salt, pepper as needed A pinch of turmeric powder 1 tsp garam masala 1 tsp amchur powder
Wash the chillies and let them dry. Pat them with tissues or paper towels to absorb excess moisture. Slit them in the middle.
Heat a tablespoon of oil in a pan and add mustard and cumin seeds. When seeds crackle, add powdered spices.
Saute for a minute and add mashed boiled potatoes. Cook the ingredients until the potatoes start turning brown because of the garam masala.
Turn off the flame and let the filling cool off. Meanwhile, mix besan with water to prepare a slurry. Sprinkle salt and pepper over it.
Stuff the chillies with this spiced filling and dip them in besan slurry before deep-frying.
When the outer layer is crispy, serve mirchi pakoda hot with ketchup or chutney.
