Pudina rice is a South Indian dish made with fresh pudina leaves, spices and rice. It is an easy and quick preparation which beautifully goes with papad or raita, making it a versatile dish for casual dinners or lunchboxes.
1 cup cooked rice 1 cup pudina 1 sliced onion 2 green chillies 1-inch ginger 2 garlic cloves 1 tsp cumin seeds 2 tbsp oil or ghee Salt to taste 8-10 cashews
Prepare a paste by blending mint leaves, green chilli, ginger and garlic paste, until it turns smooth.
Heat oil in a pan and saute cumin seeds and onion, until they turn golden.
Add the mint paste to the pan and let it cook for 2-3 minutes.
Mix the cooked rice into the pan, add salt and stir well.
Garnish by adding cashews and serve!
