Millet upma is a hearty South Indian dish made with foxtail or little millet, cooked with vegetables and spices for a light yet filling meal.
1 cup foxtail millet (washed) 2 cups water 1 onion (chopped) 1 carrot (diced) ½ cup beans (chopped) 1 green chilli (slit) 1 tsp grated ginger ½ tsp mustard seeds ½ tsp urad dal ½ tsp chana dal 8–10 curry leaves 2 tbsp oil Salt to taste
Heat oil in a pan, add mustard seeds, urad dal, and chana dal. Sauté until golden.
Add curry leaves, green chilli, and ginger. Sauté for 30 seconds.
Add onions, carrots, and beans. Cook for 3–4 minutes.
Add millet, water, and salt. Cover and cook until water is absorbed and millet is soft.
