Millet pulao is a nutritious twist on the traditional rice pulao, packed with fibre and essential nutrients. It's an easy and healthy dish perfect for a quick meal.
1 cup millet 2 cups water 1 onion, sliced 1 tomato, chopped 1 cup mixed vegetables (carrots, peas, beans) 1 tsp cumin seeds 1 bay leaf 1 tsp garam masala 2 tbsp oil or ghee Salt to taste Fresh coriander for garnish
Rinse millet under cold water and soak for 30 minutes. Heat oil or ghee in a pan; add cumin seeds and bay leaf. Add sliced onions and sauté until golden brown.
Add chopped tomatoes and cook until soft. Stir in mixed vegetables, garam masala, and salt. Drain millet and add to the pan, mixing well.
Pour in water, bring to a boil, then simmer covered until millet is cooked. Garnish with fresh coriander and serve hot.
