Millet khichdi is a healthy twist on the traditional Indian comfort dish. Made with foxtail millet, moong dal, and vegetables, it’s rich in fibre and protein, light on the stomach yet hearty enough for a complete meal.
1 cup foxtail millet (or any available millet) ½ cup moong dal 1 cup chopped vegetables (carrot, peas, beans) 1 tsp cumin seeds ½ tsp turmeric Salt and ghee to taste
Rinse millet and moong dal together and keep aside.
Heat ghee in a pressure cooker, add cumin seeds, turmeric, and vegetables.
Add millet, dal, salt, and 3 cups of water, and stir well.
Pressure cook for 2–3 whistles, then serve warm with a drizzle of ghee.
