You have surely heard about curd rice, but what about millet curd rice? It is a healthy alternative to a heavy breakfast and will keep you full with low calories. Keep on reading to learn about the recipe.
1 cup millet 2 cups water 1 cup curd (yoghourt) 1/2 cup milk Salt to taste 1 teaspoon mustard seeds 1 teaspoon urad dal 1 dry red chilli A pinch of asafoetida A handful of chopped coriander leaves
Rinse the millet thoroughly. Cook it in a pressure cooker with 2 cups of water for 3-4 whistles. Let the pressure release naturally.
Once the millet has cooled down, add curd, milk, and salt. Mix well until the mixture is smooth and creamy.
Heat oil in a small pan. Add mustard seeds, urad dal, red chilli, asafoetida and curry leaves. Pour this tempering over the curd rice.
Garnish with chopped coriander leaves and serve immediately.
