Millet curd rice is a wholesome, refreshing dish combining the goodness of millets with creamy curd. Light, nutritious, and easy to digest, it’s seasoned with aromatic spices and herbs, making it a perfect meal for a healthy and comforting experience.
1/2 cup millet (foxtail, little, or barnyard millet) 1 cup curd (yoghurt) 1/4 cup milk 1 tbsp grated ginger 1-2 green chillies 1 tsp mustard seeds 1 tsp cumin seeds A pinch of asafoetida (hing) A few curry leaves 1-2 tbsp finely chopped coriander leaves 2 tbsp pomegranate seeds 1 tbsp oil or ghee Salt
Rinse the millet thoroughly and cook it with 1.5 cups of water until soft. Allow it to cool slightly.
Mash the cooked millet lightly and mix it with curd, milk (if using), and salt. Adjust consistency with water if needed.
Heat oil or ghee in a pan. Add mustard seeds, cumin seeds, asafoetida, curry leaves, grated ginger, and green chillies. Sauté for a few seconds.
Pour the tempering over the millet-curd mixture and mix well.
Add chopped coriander leaves and pomegranate seeds for garnish. Serve chilled or at room temperature.
