Millet biryani is a healthy and gluten-friendly spin on the usual long-grain rice. You can pick your favourite millet or a mixture of mixed millet to make the cosy one-pot millet biryani.
1 cup mixed millets 2 tablespoons oil 1 onion 1 tomato 1 green chilli 1 inch ginger 2 cloves garlic 1 teaspoon cumin seeds 1 bay leaf 2 green cardamoms 1 cinnamon stick 1 teaspoon garam masala 1/2 teaspoon turmeric powder 1/4 teaspoon red chilli powder 1/4 cup chopped coriander leaves Salt to taste
Rinse the mixed millet and soak for half an hour. Drain and keep aside.
Heat some oil and saute cumin seeds, bay leaf green cardamom, and cinnamon stick.
Add chopped onion, ginger and garlic. Mix in tomatoes and cook till soft.
Stir in turmeric powder, red chilli powder, and garam masala.
Add mixed veggies like peas, carrots, and cauliflower. Pour some water and boil.
Add millet and simmer for about 20 minutes. Garnish with coriander leaves and serve.
