Mexican salsa gets its texture from the contrast between ripe tomatoes, pungent onion, fresh chilli and lime juice. Served raw, it maintains a juicy texture with a crisp bite, whereas coriander and cumin add freshness and earthy depth to it. You can use salsa for a nacho dip, spoon it over the tacos, or serve it along with grilled vegetables and meats to cut through the richer taste.

Ingredients

3 medium ripe tomatoes ½ small onion, finely chopped 1 green chilli or jalapeño, finely chopped 2 tbsp fresh coriander leaves, chopped 1 tbsp lime juice 1 small garlic clove, minced ¼ tsp roasted cumin powder Salt, to taste 1 tbsp water, optional

Step 1

Finely chop the ripe tomatoes to use in the chunky salsa, or briefly pulse them in a blender if you like a smoother texture.

Step 2

Finely dice the onion, chilli, garlic and chop some coriander. Smaller pieces distribute their flavours evenly without letting any single ingredient overpower the taste of tomatoes.

Step 3

In a bowl, mix in the chopped tomatoes, onion, chilli, garlic and coriander. This fresh combination gives the salsa’s distinct contrast of sweetness and sharpness.

Step 4

To this, add some lime juice, cumin powder and salt. The citrus sharpens the taste of tomato, whereas cumin adds an earthy note.

Step 5

Let the salsa sit for about 10–15 minutes so the flavours deepen. Taste it again, adjust the chilli or lime if needed, and serve fresh with nachos, tacos or grilled vegetables.
