Methi parathas are soft, aromatic and packed with the earthy flavour of fresh fenugreek leaves. The spices blend naturally into the dough, giving every bite a warm, homely taste. They work beautifully for breakfast, travel meals or quick dinners with curd and pickle.
2 cups whole wheat flour 1 cup fresh fenugreek leaves (finely chopped) 1 tsp cumin seeds ½ tsp turmeric Salt, oil and warm water
Mix flour, methi, cumin, turmeric and salt in a bowl, then drizzle in a little oil.
Add warm water gradually and knead until the dough becomes smooth and soft.
Rest the dough for 10–15 minutes, then roll out each portion into a thin paratha.
Cook on a hot tawa with light oil. Serve with curd or pickle.
