Methi chicken curry is a flavourful dish which is a combination of tender chicken with the earthy bitterness of fresh methi. This aromatic curry paired perfectly with rice or roti, offering a delicious and wholesome meal.
500 g cleaned and cut chicken 2 cups chopped fresh methi leaves 2 tbsp oil 1 tsp cumin seeds 2 finely chopped onions 1 finely chopped tomato 2 tsp ginger-garlic paste 1 tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder ½ tsp garam masala Salt to taste ½ cup water
Heat oil in a pan, saute cumin seeds, then add methi leaves, cook until wilted and put aside.
In a pan, saute onions until golden, add ginger garlic paste and cook until fragrant.
Stir in the turmeric, chilli, coriander powder, salt, add tomatoes, and cook until the oil separates.
Add chicken pieces, cook on medium heat for 5 minutes, stir in the cooked methi leaves and mix well.
Add water, cover, and cook for 15-20 minutes until the chicken is tender, sprinkle garam masala, mix and simmer for 2 more minutes.
Enjoy with steamed rice or roti
