Mediterranean Rice Salad is a vibrant dish made with rice, vegetables, olives, and a simple dressing. It is filling yet light and can be enjoyed as a meal or a side dish.
2 cups cooked rice (cooled) 1 small cucumber (chopped) 1 tomato (chopped) ½ red onion (chopped) ¼ cup black olives (sliced) ¼ cup feta cheese (crumbled) 2 tbsp olive oil 1 tbsp lemon juice 1 tsp oregano Salt and black pepper to taste
In a large bowl, combine cooked rice, cucumber, tomato, onion, olives, and feta cheese.
In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.
Pour the dressing over the rice mixture and toss gently.
Serve chilled or at room temperature as a light lunch or dinner salad.
