A crunchy, creamy, and refreshing Asian-inspired dessert or beverage with bright green tea matcha, sweetened milk and boiled tapioca pearls, matcha sago is summer in a glass.

Ingredients

5 cups of water ¼ cup sago or tapioca pearls ½ cup evaporated milk, chilled 2 tsp matcha 2 tbsp honey 1 cup strawberries, chopped 1 cup lychee, chopped ½ cup matcha jelly ½ cup lychee jelly

Step 1

Heat the water to a boil, then add the sago and cook until the pearls are transparent. Stir from time to time.

Step 2

To get rid of extra starch, drain and rinse the cooked sago under cold water. Put aside.

Step 3

In a bowl, whisk matcha powder with a little warm water until smooth and lump-free.

Step 4

Stir thoroughly after adding the honey to the matcha mixture. To make a creamy matcha foundation, add cold evaporated milk and stir.

Step 5

Add cooked sago, strawberries, lychee, matcha jelly, and lychee jelly to serving glasses.

Step 6

Serve by adding the matcha milk, stirring gently, and serving cold.
