Matar paratha is a classic winter comfort breakfast that is prepared by stuffing mildly spiced green peas filling in paratha. Lightly sweet, fragrant, and hearty, it is perfect for cosy breakfasts or tiffin meals.

Ingredients

1½ cups whole wheat flour ¾ cup fresh green peas (boiled & mashed) 1 small green chilli (finely chopped) ½ tsp cumin seeds ½ tsp grated ginger ½ tsp garam masala ½ tsp red chilli powder ¾ tsp salt (or to taste) 2 tbsp oil or ghee (for dough & roasting) Water as needed for kneading

Step 1

Knead the whole wheat flour with some salt, water, and 1 teaspoon of oil to make a soft, smooth dough. Cover and let it rest for about 15 minutes.

Step 2

Mash some boiled green peas and add ginger, green chilli, cumin seeds, garam masala, red chilli powder, and salt to make a flavourful stuffing.

Step 3

Divide the dough into equal balls. Flatten each one using a rolling pin, place the filling in the centre, gather the edges, and seal carefully without tearing.

Step 4

Gently roll the stuffed dough ball to make a medium-thick paratha with light pressure, dusting of flour as required to prevent sticking.

Step 5

Cook the paratha on a hot tawa with ghee or oil from both sides until it turns golden.

Step 6

Serve hot matar paratha with some butter, curd, or pickle or over a cup of tea.
