Palmier cookies are a must-try for home bakers because they require minimal ingredients, look elegant, bake quickly, and deliver irresistibly crisp, caramelised layers.
½ cup granulated sugar 2 ½ tsp of cinnamon 1 package puff pastry sheets
Defrost the puff pastry sheets overnight or leave at room temperature for 40 minutes
Combine the sugar and cinnamon in a mixing bowl. Set aside. Unfold 1 pastry sheet on parchment paper.
Roll out the pastry sheet in both directions to flatten and smooth it. Cover the pastry sheet with ¼ cup of sugar-and-cinnamon mixture
Roll over the mixture. Flip pastry sheet and repeat process. Roll dough out to a 13-by-13 square.
Fold dough from opposite ends inwards to the centre twice. Fold one half over the other to form a closed book shape.
Repeat with second pastry sheet. Chill dough for 15 mins. Slice to ⅜ inches. Cut into heart shapes.
Bake for 4-7 minutes at 400C. Let them cool. Enjoy!
