Set dosas are a popular breakfast of ‘tiffin foods’ of Karnataka. They are quicker to make, and even easier to pack and serve. Since they are typically consumed in a ‘set’ of three, they have been called ‘set dosas’. If not sambhar, these dosas can also be served with veg sagu, a stew-like dish made with a combination of chana dal, urad dal, potatoes, ginger and mustard seeds.
500 grams of rice ¼ cup of urad dal ¼ cup of poha or aval 1 teaspoon of fenugreek seeds Salt to taste Ghee or oil for cooking Water as required
Wash raw rice, urad dal and soak them along with fenugreek for 3 hours.
Soak poha or aval for half an hour.
Grind everything together by adding water to a smooth consistency. Add salt and allow to ferment for 6-8 hours.
Heat a pan or dosai kal, pour a ladle full of batter. Spread the batter, drizzle sesame ghee or oil and cover the dosai with a lid.
When done, remove the lid and take off the dosai. Enjoy set dosas with sambar and chutney.
