Masala chai is a comforting blend of robust tea, aromatic spices, and milk, cherished across India for its warmth and flavour. Perfect for any time of the day, it invigourates the senses and soothes the soul, making it a timeless favourite in every household.

Ingredients

1 cup water 1 cup milk 2 tsp black tea leaves 2-3 cardamom pods, crushed 1 small cinnamon stick 2-3 cloves A small piece of fresh ginger 1-2 black peppercorns Sugar

Step 1

In a saucepan, bring 1 cup of water to a boil over medium heat. Add the crushed cardamom pods, cinnamon stick, cloves, grated ginger, and peppercorns.

Step 2

Let the spices simmer in the water for about 2-3 minutes, allowing the flavours to release into the water.

Step 3

Add the tea leaves to the spiced water. Let it brew for 1-2 minutes, depending on how strong you like your tea.

Step 4

Pour in 1 cup of milk and bring the mixture to a gentle boil. Reduce the heat and simmer for another 2-3 minutes, letting the tea and spices infuse the milk.

Step 5

Add sugar according to your taste and stir until dissolved. Once the chai reaches your desired strength, strain it into cups to remove the spices and tea leaves.
